Yesterday’s Baked Potato is Today’s Yummy Side Dish
Three Delicious Recipes for Recycled Baked Potatoes –
- Baked Parmesan Potato Wedges,
- Mashed Potato Pancakes and Waffles,
- Fried Potato Slices with Chive Dip
I love baked potatoes, but my kids do not share my affection for the beautifully simple, all-in-one meal. I enjoy a baked potato with toppings like roasted veggies or ground meat or chicken, or with a bit of melted butter, salt and pepper and a side salad. In my house I don’t have sandwich night, I have baked potato night. Baked Potatoes have a healthy dose of potassium, vitamins C and B-6, as well as 4 grams of fiber and even a bit of protein. If you love the crispy skin of the baked potato, you will be sure to get all of the health benefits – choosing organic and washing thoroughly, of course.
Anyway, I am getting off topic…Since my kids do not share my love of the baked potato and I was reluctant to come to terms with that strange phenomenon, I was constantly left with uneaten baked potatoes in the fridge. In order to create a use for the uneaten baked potatoes, I have to admit I resorted to some tasty, albeit slightly calorie laden, methods. Everyone loves these “recycled” baked potato recipes!
Recycled Baked Potato Recipe #1 – Fried Potato Slices with Chive Dip
After the baked potatoes have spent a night or two in the fridge, I pull them to and slice them up (about 1/4″ thick). I heat up some olive oil (about 1.5 Tablespoons) in a big cast iron skillet and I fry them up until crispy and golden brown on the outside (about 4 minutes per side). I sprinkle them with salt and pepper and a little chopped parsley. I prep a little sauce of non-fat greek yogurt, lemon juice, chives, salt and pepper for dipping. Ketchup also works but I may be the only American who does not like ketchup so it is hard for me to recommend that. I serve these with breakfast or dinner.
Recycled Baked Potato Recipe #2 – Mashed Potato Pancakes and Waffles
Take your leftover baked potatoes out of the fridge and peel off the skin. Mash the soft insides in a bowl with a little softened butter (about 1 Tablespoon per potato), parsley, room temperature greek yogurt (about 1 Tablespoon per potato – you can also use sour cream) and some grated parmesan cheese (about 1 teaspoon per potato) – season with salt and pepper. This yummy mixture can either be made into pancakes and cooked in a cast iron skillet with a little olive oil or dropped on to a waffle iron (be sure to spray the iron with non stick spray) and you have mashed potato pancakes or mashed potato waffles! Same sauces as above will be great!
Recycled Baked Potato Recipe #3 – Parmesan Potato Wedges
Take your leftover baked potatoes out of the fridge and slice them lengthwise into 4-6 wedges. Place them on a baking sheet and brush them with olive oil. Place in a preheated oven (375 degrees) for about 15 minutes. After 15 minutes, take the potatoes out and sprinkle them with grated parmesan cheese, salt and pepper. Return to the oven and bake for an additional 10 minutes.
