I discovered, The Oh She Glows Cookbook while reading an article from BambooCoreFiteness.com on favorite cookbooks. The Oh She Glows Cookbook Green Smoothie on page 59 sounded like just what I needed to give me a boost through the end of a long winter and set me on the road to a healthy and glowing spring. I have to say, when I tried this green smoothie, I felt immediately energized and was excited to power through the rest of my day.
It tastes good, is very refreshing and also easy to make – see printable recipe below. Just pop all of the ingredients into a blender and give a whirl – I use my NutriNinja tall cup and then I can just screw the drinking cap on and go.

- ½ cup watermelon cubes
- 1½ cups baby spinach leaves or other leafy green
- 1 cup coconut water or water
- 1 large sweet apple such as Gala or Honeycrisp
- ⅓ avocado
- 2 tablespoons fresh lime juice
- 10 large mint leaves
- 5 large ice cubes
- Combine all ingredients in a blender such as a NutriNinja or Vitamin
- Blend until smooth

Even though you are not a smoothie gal, and maybe because you are not, I think you would love this. It is not sweet and sticky but really cool and refreshing!
